Simple Vegan Meal Ideas with Hungry Harvest

In August I had the opportunity to create some simple vegan meals using produce from Hungry Harvest. Hungry Harvest is a weekly subscription produce delivery company serving Maryland, DC, Virginia, and parts of Florida. Using the service is simple and convenient. You create an online account and select the size of your delivery (options include mini, full, and super). You can receive a delivery every week, with the option to suspend your subscription based on your needs and preferences. Our delivery contained black plums, clementines, 2 large zucchini, snap peas, radishes, a large English cucumber, and baby russet potatoes.

Not only does Hungry Harvest provide affordable local produce delivered to your home, the company focuses on creating a better food system by reducing food waste and ending hunger. From the Hungry Harvest website:

Every year, 40% of food goes to waste in this country. 20 billion pounds of that is produce that’s lost before it ever leaves the farm.

The injustice of wasting this much edible food when 20% in the US lack access to a nutritious diet is plenty reason to rescue this produce & help mend a broken food system. But the impact of wasted food extends well beyond our bellies. Almost a quarter of agricultural water is used to grow food that’s not eaten. We generate the equivalent greenhouse gas emissions of 1 in 7 cars by growing, shipping & processing uneaten food. Cutting food waste in half globally could reduce our ecological footprint by 16% & ensure a more sustainable future.

Making a positive environmental impact is just one of the reasons  why we work every day to rescue this fresh & delicious produce whose only crime is being a little off-size, off-color, a little ugly or a little overproduced. Packing this into our weekly variety boxes & delivering it to your doorstep not only helps eliminate unnecessary & avoidable food waste, but it also supports efforts to eradicate hunger in this country. So far, with the help of our Harvest Heroes, we’ve rescued over 9 million pounds of food from going to waste & provided access to over 800,000 pounds of fruits & veggies to those who are food insecure…

Upon receiving our Hungry Harvest box I whipped up two simple one-pot dishes using the produce from our delivery: Hummus Pasta and Green Curry Lentil & Quinoa Stir Fry.
