Your loved ones will melt over this surprisingly simple yet delightfully decadent Chocolate Avocado Pudding. This special Valentine’s recipe (below) is from our good friends at Lighter who are always sharing creative ways to make it easy for us to eat delicious, healthy food.

Lighter’s Chocolate Avocado Pudding is made with heavenly whole foods: melt-in-your-mouth avocados, antioxidant-packed cocoa powder, and naturally sweet dates. Plus, it’s so simple to whip up.

Are you ready to have your pudding (and eat it too)?  Grab a spoon, and take a bite. Get ready to fall in love!  It’s 100% indulgent without the guilt.

 

Surprisingly Simple Chocolate Avocado Pudding

 Ingredients:

  • 2 ripe avocados, peeled & pitted
  • ½ cup almond milk
  • ⅓ to ½ cup cocoa powder, depending on how chocolatey you like it
  • 10 medjool dates, pitted (or 14 deglet noor dates -the smaller dried type without pits)
  • 1 teaspoon vanilla extract

 Directions:

Blend all ingredients in a high-powered blender or food processor until smooth and creamy. Refrigerate for at least 5 hours to cool.

Enjoy as is or with strawberries on top!
